Fried rice with vegetable is a very tasty food. Vegetables are sauted with rice and spices to make vegetable fried rice. I like this rice personally as my lunch. It is also easy than other fried rice recipe. As I lead a busy life, I am always looking for easy and fast cooking recipe. Moreover, it is very healthy too. It will provide you carbs, proteins, fats, vitamins and minerals. You can try this for your lunch. I think you will like it too. Before cooking, you need to arrange necessary ingredients for vegetable fried rice.
Let’s check the ingredients we will need to cook vegetable fried rice.
Basmati or katarivog rice – 1 cup
Water – 4 cups
Oil – 2 -4 drops
Salt as needed
For vegetable fry
Capsicum – 100 gm. (chopped)
Chopped tomato – 150 gm.
Chopped onion – 50 gm.
Chopped carrot – 50 gm.
Ginger paste – ½ tea spoon.
Green peas – ½ cup or 50 gm.
Garlic paste – ½ teaspoon.
Cumin powder ¼ tea spoon.
Cumin seeds – ½ tea spoon.
Turmeric powder – ½ tea spoon.
Chili powder ½ tea spoon.
Lemon juice – ¼ tea spoon.
Salt as needed.
Coriander leaves (chopped) – few.
Fried Rice Recipe
Cook the rice
1. Rinse the rice in water until the water becomes clear of starch and transparent. If the starch remain in water it makes the rice sticky. So rinse the thoroughly till the water becomes transparent.
2. Rice should be soaked in water for about 30 minutes then drain off the water.
3. Take a pot, add rice and 4 cups of water a little salt and 3 – 4 drops off oil in it.
4. Stir well and cook the rice until it is well cooked.
5. Rice should not be cooked too much otherwise it will become sticky and mushy. So the appearance of fried rice will be lost.
6. To drain the water of the rice, add the cooked rice in a strainer.
7. Let the steam to pass away of the rice then cover with a lid.
8. Keep to cool the rice.
1. Boil the vegetables – potato, carrot and green pea or steam them. Ensure all the vegetables cooked well. You can also use pan or pressure cooker.
2. Peel the potato and chop the potato and carrot.
3. Take a pan on flame. Melt some 1 table spoon of butter or oil. Put cumin seeds and saute until they appears brown.
4. Add chopped onions and fry till they become translucent.
5. Add the garlic paste and ginger paste. Saute for a couple of minutes.
6. Then add the chopped tomato and capsicum.
7. Stir them well. Then add all spice powders to them.
8. Stir well again. Saute the mixture for 2 – 3 minutes and look that the oil or butter is releasing from the mixture.
9. Then pour the chopped potato, carrot and green peas. Add some salt as required and stir.
10. Saute the whole mixture again for 1 or 2 minutes. Then mix the cooked rice and stir thoroughly.
11. Keep it covered with a lid for some time. Again gently stir.
12. Decorate with chopped coriander leaves, lemon slice, mint leaves. Your vegetable fried rice is ready to serve.
13. Serve the fried rice to 2 persons. You can serve it with pickles or salad.
